Quorn Chicken Nuggets; those things that live in the back of our freezers which all too often are dismissed as just being kiddy food that you can just chuck in the oven. Bet you didn’t know, though, that even by the judgements of the serious home cooks among us, there are some ways you can turn an otherwise boring box of nugs into a miracle meal, all on a student-friendly budget. To start you off into your adventure of revamped recipes, here are 3 foolproof and super tasty dishes that use weird Quorn chicken nugget recipes, so that you can whip together quick but tasty vegetarian meals!

We recommend just classic lettuce but put any salad leaves of your choosing in a bowl with some chopped tomatoes. While the nuggets are in the oven, make a super easy dressing with a teaspoon of mustard, some honey, white wine vinegar, olive oil and plenty of salt and pepper. Toss everything together, and if you’re feeling a bit extra, why not throw in some croutons?

A perfect easy dinner that’s great for a summer meal with friends.

Blitz together tomato passata and a teaspoon puree with a pinch of sugar, some ground cumin, finely chopped chilli and a sprinkling of salt and pepper to taste. Whip together a quick and easy natural yoghurt sauce with some mayonnaise, garlic and mint thrown in. While the nuggets are cooking, sort out a side salad of chopped tomato, onion, parsley and mint, all recessed with lemon juice and olive oil. To serve, heat a couple of pitta breads in the microwave and fill generously with the nuggets, salad and plenty of both sauces.

Posh Nuggets with Honey and Garlic Glaze

Ideal for if you’re hungry for nuggets but want something a little more special. These nuggets match perfectly with some steamed rice but are just as great on their own!

Measure out ⅓ cup of water and ½ cup of honey and over a low heat, mix them together in a saucepan. Add 5 crushed garlic cloves along with a splash of soy sauce, plenty of lemon juice, a pinch of cornstarch and salt and pepper till the sauce begins to thicken. Make sure not to let it get too thick, as after you take it off the heat, it will continue to thicken and you don’t want the glaze to be too difficult to pour. Once the nuggets are finished in the oven, drizzle the glaze over them, making sure that they are evenly covered. We recommend a sprinkling of sesame seeds and some spring onions on top to serve.
